Eat the Rainbow! specials board Celebrate the blooming season with these colorful dishes packed with nutrients Layered Fruit Smoothies (Makes 6) RED LAYER: 1 cup strawberries or raspberries (fresh or frozen) 3 Tbsp. plain or vanilla Greek yogurt 2 Tbsp. pomegranate juice or water ORANGE LAYER: 1 cup mango or peach (fresh or frozen) 2 Tbsp. plain or vanilla Greek yogurt 3 Tbsp. orange juice or water YELLOW LAYER: 1/2 cup pineapple (fresh or frozen) 1 banana 2-3 Tbsp. water GREEN LAYER: 2 kiwis 1/2 cup spinach 2-3 Tbsp. water PURPLE LAYER: 1 cup blueberries (fresh or frozen) 1/3 cup plain or vanilla Greek yogurt 2 Tbsp. almond butter 1 Blend the ingredients for each layer separately in a blender, rinsing between each batch. Refrigerate each layer separately as they are complete. Once all five mixtures are blended, layer the smoothies by spooning some of each evenly into six glasses or Mason jars. Serve immediately.
