h o u s e c a l l s { winter 2019 } 47 specials board Streusel-Stuffed Apples {SLOW COOKER} (Serves 4) 1/2 cup rolled oats 1/4 cup brown sugar 2 Tbsp. chopped dried cranberries 1 Tbsp. unsalted butter, cold, diced into small cubes 3/4 tsp. cinnamon 4 firm baking apples (such as Honeycrisp or Braeburn) Vanilla ice cream and toasted walnut pieces, optional, for serving 1 Gently mash first 5 ingredients together in a small bowl until well combined. Core apples using an apple corer or paring knife, leaving about half an inch of the bottom intact. Fill the cavity of each apple with oats mixture, packing the filling in firmly to the top. (Any leftover filling can be evenly distributed over top of apples.) 4 Place apples in a slow cooker so they are standing upright. Add enough water to cover bottom of pot, about a quarter of an inch. Cook on high heat for roughly 3 hours, until apples are soft when pierced through with a fork. 5 Let apples cool for 10 minutes. To serve, top each with a scoop of ice cream and nuts.
