Easy Does It specials board Whip out your slow cooker—or Instant Pot, if you've joined the craze—and whip up these easy, warming winter dishes Cauliflower Tikka Masala {SLOW COOKER} (Serves 4) 1/2 Tbsp. olive oil 1 medium onion, diced 4 cloves garlic, minced 1 Tbsp. freshly grated ginger 1 Tbsp. garam masala (available in the spice aisle) 1 tsp. ground turmeric 1/2 tsp. Kosher salt 1/4 tsp. cayenne pepper (or less, if sensitive to spice) 1 (28-oz.) can no-salt-added diced tomatoes 1 large head cauliflower, tough greens removed, cut into large florets 1 cup coconut milk 1 (14.5-oz.) can chickpeas, rinsed and drained Fresh cilantro and cashews, for garnish 1 Heat olive oil in a large skillet over medium-high heat. Sauté onion until softened, for about 3 minutes. Stir in garlic, ginger, and seasonings. Cook, stirring frequently, until fragrant and lightly browned. Deglaze the pan with tomatoes, juices included, scraping any browned bits from the bottom of the pan. Transfer mixture to a slow cooker. Add cauliflower then gently stir in coconut milk and chickpeas. Cook covered on low for 4 hours. 4 Serve stew-style over brown rice or with naan bread. Top each serving with fresh cilantro and cashews.
