h o u s e c a l l s { fall 2018 } 45 specials board Quinoa-Beet Sliders (Makes 6 sliders) 2 cups cooked cubed beets 1 cup cooked quinoa 1 egg 1/4 cup minced onion 2 cloves garlic, minced 1 chipotle in adobo sauce, seeded and minced 1/4 tsp. each salt and pepper 2-3 Tbsp. almond meal or whole-wheat bread crumbs Fresh avocado slices, for serving Alfalfa sprouts, for serving Slider buns, for serving 1 Preheat oven to 350°F. Gently mash the beets in a large bowl. Stir in quinoa, egg, onion, garlic, chipotle, salt, and pepper until well combined. Add enough almond meal for mixture to hold together. Form into 6 patties, about 1½-inches thick. Bake for 25 minutes, flipping halfway through cooking. 4 Place each slider on a bun and top with avocado slices and sprouts to serve. Nutrition facts (per serving): 266 calories, 11g total fat, 1g saturated fat, 31mg cholesterol, 231mg sodium, 34g carbohydrates, 6g fiber, 3g sugar, 8g protein CHEF'S NOTE: Cooked patties will keep in the refrigerator for up to 5 days or in the freezer for up to a month.
