specials board 44 { summer 2018 } h o u s e c a l l s Nutrition facts (per Popsicle): 47 calories, 0g total fat, 0g saturated fat, 0mg cholesterol, 1mg sodium, 14g carbohydrates, 1g fiber, 10g sugar, 0.5g protein (Makes roughly 6 3-ounce Popsicles) 1/2 of a fresh pineapple, peeled, cored, and cubed 1 ripe mango, peeled, seeded, and cubed 1 tsp. freshly grated ginger 2 fresh mint leaves, finely sliced Special equipment: Popsicle molds (available on Amazon and at Walmart; Bed, Bath, & Beyond; etc.) In a blender, purée pineapple, mango, and ginger together until smooth. If needed, add water a tablespoon at a time to loosen mixture enough to blend. Stir in mint. Pour mixture into Popsicle molds and freeze. Serve once frozen. Tropical Ginger Popsicles Charred Corn Guacamole (Serves 8) 4 ripe avocados Juice of 1 lime 2 ears of corn, charred on grill or stovetop griddle 1/3 cup freshly chopped cilantro 2 Tbsp. finely diced red onion 1 jalapeño or serrano pepper, seeded and finely diced (optional) Beet chips, plantain chips, gluten-free crackers (such as flax crackers), or crudités, for serving 1 Halve avocados and remove pits. Scoop flesh out into a medium-sized bowl and top with lime juice. Using a fork, mash until few chunks remain. Cut charred corn off cob and add to avocado mash. Fold in cilantro, onion, and pepper (if using) until combined. Serve immediately alongside chips or crudités.
