Dig into four fresh dishes loaded with ingredients shown to help minimize inflammation throughout the body Strawberry Chia Salad (Serves 6) 1/4 cup unsweetened coconut flakes 4 cups baby spinach and/or chopped kale, packed 1/2 cup sliced almonds 1 Tbsp. chia seeds For the dressing: 1 ½ cups fresh strawberry slices, stemmed and hulled 2 Tbsp. balsamic vinegar 2 tsp. honey 1/4 cup olive oil 1 Preheat oven to 325°F. Spread coconut flakes evenly on a baking sheet lined with parchment paper and bake for 3 to 5 minutes, tossing frequently, until golden (taking care not to burn). Toss toasted coconut flakes with remaining salad ingredients in a large bowl and set aside. For the dressing, pulse strawberries, vinegar, and honey in a food processor until chopped. Pour olive oil in as the machine runs, stopping as soon as it is fully incorporated. Scrape down the sides of the bowl and pulse until smooth. 4 Serve dressing alongside salad, or dress then serve immediately.
